WHAT IT TASTES LIKE: Mild, floral and herbaceous with a hint of marzipan. Creamy and brilliant white paste.
WHERE IT COMES FROM: Made near Totnes, Devon, by Debbie Mumford at the Sharpham Estate farm, the goats graze on Dartmoor grass and local hedgerows adding flowers and berries to their diet.
Ticklemore is drained in individual colander moulds for 48 hours, hand-salted, and matured for up to three months while it develops a natural white mouldy coat. The colanders give the Ticklemore a unique ‘flying saucer’ shape, easily spotted on the counter. Ticklemore is also a gold medal winner at the British Cheese Awards 2014 and Global Cheese Awards 2013.
