WHERE IT COMES FROM: Keeping the tradition of single-herd artisan farmhouse cheese alive is Graham Kirkham, the third generation of cheesemakers at Beesley Farm in Goosnargh, near Preston. His mum is the original Mrs Kirkham and the family's famous cheese is the last raw milk Lancashire being made today. Traditional Lancashire has been around since at least the 13th century and is typically made from the curds collected over two days to create a rich yet light and fluffy texture.
