WHERE IT COMES FROM: Mike and Judie Smales only began making cheese on Lyburn Farm In the New Forest because their herd of 180 British Friesian cows was producing too much milk. So they went on a one-day Cheddar-making course but decided to try and make a Gouda-style cheese instead. The wonderful Old Winchester is the result – a cross between Gouda, Parmesan and Cheddar. Aged for 18 months, it has a sweet, tangy, crystalline depth.
