WHAT IT TASTES LIKE: Velvety texture, tangy, rich, spicy and slightly nutty with light chilli heat.

WHERE IT COMES FROM: Made by Billy Kevan at Colston Bassett Dairy in Nottinghamshire, Shropshire Blue follows a Stilton recipe but is coloured with the natural flavouring annatto. The cheese has a funny old history with conflicting claims about who invented it – it was certainly made in Inverness at one point in the 1970s and seems never to have been made in Shropshire!
