WHERE IT COMES FROM: Made by Billy Kevan at the renowned Colston Bassett Dairy in Nottinghamshire, which is also home to our superlative Stilton. Under the deep orange-brown rind, Shropshire Blue’s colour comes from the natural flavouring annatto. It’s basically a Stilton but is velvety, slightly milder in flavour and sweeter. Maturation times differ – some say it’s best at 6-8 weeks while others prefer it a bit older at 12 weeks or longer.
