WHAT IT TASTES LIKE: Dense, moist and rich, bright acid tang, savoury and fruity.
WHERE IT COMES FROM: Five generations of the Keen family have been making traditional Somerset Farmhouse Cheddar since 1899 so they know their stuff! Using only unpasteurised milk from their 250-strong herd of Friesians at Moorhayes Farm, Wincanton, Somerset, cheesemaking happens within 12 hours of milking. Pressed and bathed in hot water for three days to create a crumbly texture, the truckles of Cheddar are then bound in muslin and stowed on cellar shelves to mature while being carefully turned and tended. The Keen’s Cheddar we have now is aged for 22 months. This is a hand-made artisan cheese, which may contain naturally occurring blue veins.
