WHERE IT COMES FROM: Reblochon Fermier is a wonderful mountain cheese produced in the Haute Savoie/Rhône-Alpes region of France and was first recorded in the 14th century. Produced from the raw milk of Abondance and Montbéliarde cows (same as Comté, Beaufort and others), its rind is washed with whey and ripened with a solution of bacteria before being aged in cellars or caves, growing a thin covering of white mould during its eight week maturation. Affinage by Missilier.
