WHERE IT COMES FROM: Made in Doubs, Franche-Comté, from the milk of Montbéliarde and Simmental cows, this Gruyère-style mountain cheese is traditionally warmed and melted in front a fire and scraped onto boiled potatoes, charcuterie and cornichons. This is where it gets its name, from the French word racler, meaning to scrape.
