WHAT IT TASTES LIKE: Aromatic rind and creamy, nutty, pale-yellow paste.

WHERE IT COMES FROM: Raclette is a semi-hard cow’s milk cheese, commonly melted in Alpine regions and scraped onto boiled potatoes, sliced charcuterie, cornichons and other treats – in fact Raclette comes from the French word racler, ‘to scrape’. It’s also rather delicious as part of a cheeseboard.
