WHAT IT TASTES LIKE: Deliciously oozy, creamy paste, mildly nutty and lemony, hinting at flavours of the farmyard but becoming decadently pungent and runny when ripe.
WHERE IT COMES FROM: From the stable of Highland Fine Cheeses at Tain, which also includes the quirkily-named Blue Murder, comes Minger – it's a wee stinker, washed in annatto to create a sticky bright orange rind, like a Scottish Munster or Epoisses. Highland Fine Cheeses are based at Blarliath Farm on the shores of the Dornoch Firth where maker Rory Stone crafts artisan cheeses using milk from three local farms.
