Direct from Tuscany, Michele Portoghese’s finest is bronze extruded in the traditional artisan fashion and left to slowly dry at a low temperature, which has a big effect on the taste and protein content. Orecchiette – ‘small ears’ – also known as Strascicati or Strascinati, is a pasta shape typical of Pugliese cuisine, a round disc with a slightly hollow centre made by tearing small pieces of dough with a knife and folding over the thumb.
