WHERE IT COMES FROM: Another from the stable of Errington Cheese at Carnwath, Lanarkshire, the Manchego-like Corra Linn was maker Selina Cairns’ answer to a glut of milk in spring and early summer from the family's 450-strong flock of Lacaune sheep (the breed used to produce Roquefort). Aged for nine months, its taste changes subtly from batch to batch, depending on the fat content of the milk at different times of the year. Named after the spectacular cascade at the nearby Falls of Clyde, which features on the beautiful label. Silver medal winner at the 2023 World Cheese Awards.
