With over 25 years experience working as a chef in many establishments, I have always had a passion for gastronomy and especially perfectly matured world class Artisan cheese. Ten years ago I started to work exclusively with Cheese and I have been hooked ever since.
Having opened our first shop on Byres Road in Glasgow in July 2010, I have sourced some wonderful award winning cheeses from the British Isles, France, Italy, Spain and Switzerland. I have specially selected and tasted many cheeses by visiting Herve Mons-Fromage Affineur caves in Saint-Haon-Le-Châtel in the Loire and also Neal’s Yard Dairy in London. We can now proudly say that we are Mons main stockist in Scotland and have developed a wonderful relationship with the team at Neal’s Yard.
Having established ourselves in Glasgow, and thankfully won a number of awards along the way, including UK Cheese Counter of the Year 2014 at the World Cheese Awards, we opened our second shop in Stockbridge in Edinburgh in November 2015.
Whilst our Glasgow shop is fully refrigerated and specially designed to create the perfect conditions for the cheese, we have taken this a step further with the Edinburgh shop and created the first cheese shop of it’s kind in Scotland. Using state of the art refrigeration, counters and shelves made out of tonnes of Welsh slate and spruce, as well as 1-foot deep concrete floor, we have created cavelike conditions absolutely ideal for storing and maturing our wonderful selection of cheeses.
Having worked closely with a number of Scotland’s top restaurants for a number of years, we are passionate about delivering an unbeatable product tailored to your specific needs and with customer service and quality at the heart of all we do.
As part of the service we extend to our wholesale customers, we can visit you and host in-house training to advise on how best to taste, talk about, interact with and care for our cheeses. We are also more than happy for your team to visit us in the shops to learn more and are able to help arrange visits to dairies and producers to help enrich the knowledge of your team and in turn enrich your customers’ experience.
Our cheeses vary season to season, batch to batch, day to day. It is essential that we are able to understand and communicate this variability so as to ensure that the right cheese of the right batch goes to the right customer. For this reason, we like to keep in regular contact with our customers, as much as our cheeses, either over the phone or in person.
