WHAT IT TASTES LIKE: Soft, creamy and very more-ish, hints of meadow flowers and white wine with a woody finish.
WHERE IT COMES FROM: Swiss cheesemaker Vincent Tyrode is well known in the cheese world as a Gruyère producer from his dairy in Auberson, near Vaud, but he turns his hand to Vacherin when the season starts in August. Vincent works with 15 milk producers, all very small scale farmers with an average herd of 35 cows, and their top quality milk makes a sumptuous rosy-rinded cheese with a beautifully glossy paste, sweetly creamy with a perfect amount of resin from the spruce cambium bands it's wrapped in. Dip into it while it’s piping hot from the oven, or scoop it straight from the box!
