WHAT IT TASTES LIKE: Rich, soft and oozy, bloomy with a floral earthiness, and notes of pine from the spruce bark band.
WHERE IT COMES FROM: Winslade is a fairly new cheese, developed in the last two years by Stacey Hedges, maker of the famous Tunworth at Hampshire Cheeses. Like a combination of Vacherin and Camembert, it’s even bound with a spruce band like Vacherin to hold the gorgeously creamy paste. Develops a dappled bloomy rind with a pinkish hue over its eight-week maturation. Best soft cheese at the 2018 Artisan Cheese Awards.
