A reinvention of the Genoese classic with a Fife twist, Byam Trotter at Trotter’s Independent Condiments has replaced basil with foraged wild garlic, olive oil with Scottish rapeseed oil and Parmesan for local cheese Anster. Absolutely sumptuous and amazing with pasta, sandwiches, gnocchi, fish salad dressings, cheese, fried mushrooms, roast tomatoes… pretty much anything to be honest.
