WHERE IT COMES FROM: Made at Doddington Dairy, at North Doddington Farm in Wooler, Northumberland, at the foot of the Cheviots, Smoked Cuddy’s Cave is crafted from the raw milk of a herd of Friesian and Ayrshire crosses. The cheese gets a 48-hour oak chip smoke at the Teviot Smokery near Jedburgh.
