WHAT IT TASTES LIKE: Firm, rich, sweet and savoury with a salty hit, distinct caramel flavour and slight goat tang.
WHERE IT COMES FROM: Gjetost is a national icon in Norway and divides opinion there much like Marmite here. Also known as brunost – brown cheese – it’s been described as a kind of salty goat fudge. Goat's milk whey and cow’s cream are slowly boiled down so that the milk sugars caramelise before it’s poured into moulds to create a firm and fatty cheese-like block. It's usually enjoyed at breakfast on grainy bread but it's also popular melted as a sauce onto waffles. It can also be used in meat stews for a richer depth of flavour or you can even make a cheesecake out of it! The name comes from the Norwegian for goat – gjet.
